Some good advice in the article for dealing with the initial lines at Cars Land.
Having now been there - you guys will love it. They've done a remarkable job of capturing the feel of the movies (particularly the first), and building in a couple of great rides.
One thing I hadn't realized - Radiator Springs Racers has two different narratives; you'll want to see both.
The anticipation is building...
...I've also heard that Radiator Springs Racers is VERY cool at night with the lighting, so that's at least 3 times we need to ride it. :-)
Oh, and for the record - counting on fastpass for Radiator Springs Racers is not safe, unless you're getting there really early. At 8:05, the line for Fastpass stretched all the way to the Hollywood Tower, and the employee we talked to suggested that we were potentially beyond the point where distribution would end. (We decided not to wait, having ridden the ride the day before.) Hopefully by the time you guys get there, it will be easier to get on the ride. But the lines for Luigi's Tires will likely not be short for some time, as it doesn't have the capacity of other rides.
You _definitely_ want to be there at dusk, at least one night...
